What is Unctuous Potential?
Trotter Gear is the first commercially available product from St. John. It comprises nudgels of giving wobbly pig's trotter captured in a splendid jelly and is made from chicken stock, pig's trotters, onions, carrots, Madeira, leeks, thyme, celery and peppercorns.

How do I use it?
If pot roasting or braising, add Trotter Gear and you are assured of a giving piece of meat, the same with stews - let it work its wobbly magic. Almost the finest use of Trotter Gear is game pie or braising a whole bird, say with red cabbage - but do not be afraid; it has many companions; beef, bacon or rabbit for example.
How does it end up in the dish?
